FIDDLEHEADS in Vermont

The Ostrich Fern is a type of fern that grows in New England and can be harvested to eat. They can be picked when they first come out of the ground in springtime and are called Fiddleheads. I have been told by many of my friends who tried them for the first time that they are like asparagus. They are DELICIOUS and also FREE, that is if you want to spend the time to pick them

Here is what they look like.

When picked in the wild, Fiddleheads must be picked before the fern fully opens. The Ostrich Fern has a brown scaly coating on the outside which distinguish them from other ferns.


To Cook THEM:
Blanch with boiling water for 5-8 minutes on the stove


Strain and Place them in a Bowl of Ice water, then rinse to get the brown stuff off


YOU CAN EITHER FREEZE THEM FOR LATER OR COOK THEM AT THIS POINT


Cook them on stovetop with a frying pan until tender with..


4 tb. of soy sauce
1 tb. Lemon Juice
Salt and Pepper
